A quiz is a lesson type, so it lives in the course alongside everything else and can be required before later lessons open.

Write the instructions members read before they start, if they need any.
Write your questions
Each question has answer options. Tick the correct one, or turn on multiple answers and tick every correct one.
Set the passing score
Either a percentage, or the number of questions a member must get right.
Write the results screens
What a member reads when they pass, and when they do not. Leave these blank to use the defaults, which are friendly and tell them to give it another go.
The completion screen
A course has its own completion screen: what somebody reads when they finish the whole thing. It is the natural place to point them at the next course, invite them to a live session, or simply say well done in your own words.
Common questions
Can members retake a quiz?
Yes. Failing is not a dead end.
Do I see individual answers?
You see whether somebody passed, and their progress through the course. There is no per-question breakdown today. Quizzes are a learning device here, not an assessment product.
Can I issue a certificate?
Not as a generated document. The completion screen is where you say it, and plenty of coaches attach a certificate as a file to the final lesson.
